We are a distillery that makes single malt whiskies. 

Our aim is to make whisky, proudly labeled “Made in Niigata” that
utilizes the natural features of where it is made. 

We carefully craft high-quality whisky with the clear waters
created by snow country.

We focus on the things we can do thanks to being a small
distillery while we pursue an amber-colored dream with a rich narrative. 

Our Commitment

Distillationusing the clearest water

Delicious whisky cannot be made
without the best water as water is the key ingredient that determines taste and
aroma. We use generous amounts of the clear water of the Agano River as the
base to our whisky. This is craft whisky made, from start to finish, with great
care only possible at a small-scale.

Characteristics

Uniquesweetness and long-lasting aftertaste. 

Our whisky is characterized by its sweetness and its long-lasting
aftertaste. The secret lies in the depth of our unblended whisky distillate which is made
by first adding warm water and yeast to milled malted grains and letting it
ferment. We take great care to monitor the fermentation times because if it
ferments for too long, it will become too acidic. After two rounds of careful
distillation we have created a whisky with a bodily aroma and bold flavor.

Japanese Whiskey

OHTANI WHISKY NIIGATA KAMEDA zodiac sign series「Pisces」

This is a single malt whisky crafted from
100% whisky distillate. It is our first officially released product that meets the standards
for “Japanese whisky.” Created in the image of a Pisces woman, it is aged primarily in bourbon
barrels to give it sweet aromas of vanilla and chocolate with nice light
accents of fruity tartness. It is a whisky that allows you to enjoy our
characteristic long-lasting aftertaste.

Profile

HIROYUKI DODA

The founder was born in Hokkaido in 1975. After graduating from a local university, while working for a pharmaceutical company, he was transferred to Niigata.
He married the representative director of Otani KK, famous for the “Hanko-no-Otani” personal stamp making business.
He joined the company in 2015 and, for a while, worked in sales but his long-time interest in whisky grew and he started down the path to creating whisky.
Four years after joining Otani, he established the Niigata Small-scale Distillery, despite having zero knowledge or experience.
He got equipment with help from brewers in Ibaraki and Kagoshima, he attended training, and he studied and studied and after much trial and error, he created a whisky that suits his tastes that is sweet with a long-lasting aftertaste.
His goal is to have at least one in every 10,000 people think his whisky is delicious. He is in pursuit of the ultimate cup of whisky, for himself and for every person who has enjoyed the whisky he has created.

  • Hanko

    A hanko business established in Niigata in 1991. Currently ranks number one in the country for sales and profits as a large-scale personal stamp specialty shop.

  • Eel Farming

    Eel farming that uses the warm water from the whisky distillation process and the protein-rich spent malt for eel feed.

  • Baumkuchen

    Rich with the aroma of our “New Born” whisky, this fan-favorite is made with milk from cows that are fed spent malt.

  • Cheese

    Cheese made from milk from cows that are fed spent malt. Camembert and mozzarella are particularly popular.
